  1. Water cress soup is a good way to use the herb. We have it often. We simmer the leaves, some potatoes,onions, garlic and chicken or veg broth, fresh ground pepper, some butter or margarine and salt to taste. I used to put it on the edge of the wood stove and let it simmer for a couple hours.
